20 minute meal: Greek chicken pitas

There are nights when I come in from a workout class at our gym and it is almost 8 o'clock and I am just plain tired and want to get dinner on the table as quickly as possible. I always try to prepare for nights like this by making something in the crockpot or defrosting a meal from the freezer. But try is the key word there and sometimes try as I might, I walk in the door at 8 o'clock, starving after an intense cardio class with no game plan for dinner. 

Luckily, I almost always have the ingredients for this light and delicious meal on hand in my kitchen and I bet you do, too. 
Greek Chicken Pitas
  • 2 boneless, skinnless chicken breasts
  • Greek seasoning
  • Parsley
  • Pepper
  • Lemon Juice
  • EVOO
  • Hummus
  • Tzatziki spread 
  • Lettuce
  • Tomato, diced
  • Onion, diced
  • Cucumber, diced
  • Feta Cheese
  • Whole wheat sandwich thins or pita pockets (Kangaroo brand is my favorite)

1. Cut chicken into one inch cubes and season generously with greek seasoning, parsley, and pepper. 
2. Heat a little EVOO in a skillet over medium-high heat.
3. Add chicken and 1-2 teaspoons of lemon juice. 
4. Sautee chicken until fully cooked. 
5. Set up an assembly line. I like to spread a little hummus on one side of the sandwich-thin and tzatziki spread on the other. You can use a little greek yogurt if you don't have tzatziki on hand. Fill the pita with a mixture of chicken, lettuce, tomato, onion, and cucumber. Top with a little feta cheese. This pita is light and refreshing and goes well with a little jasmine rice on the side. Enjoy!

Kate Spade Loves

Happy Monday pretties! I hope you all had a great weekend. Corey and I did and I even got some shopping in. I am dying over spring fashion this year. I cannot wait for the weather to warm up a little. Have you seen some of Kate Spade's newest items? Her most recent collection is fabulous.
I am loving this Cobble Hill Andee bag in a light, rosy pink color. Isn't it gorgeous?!

The Carol dress is such a flattering cut and I love the color. It has pockets, too, which I adore.

I am loving the embellished neckline on the Bradie shift dress. Isn't is so feminine and lovely?

At some point this darling Tock flat in pale pink patent will be making an appearance in my closet. These babies are such a gorgeous shade of pink and would be perfect for work. 

I just love these Terry flats in leopard with a hot pink capped toe. I probably won't be investing in these but they are so fun and pretty. 
I have always been really happy with Kate Spade's sandals. I love this gold pair with a preppy bow. This pair is called the Trendy and I think they are just too cute.

What I'm Loving: Healthy grocery store finds

Happy middle of the week ladies!

I've mentioned before that Corey and I re-devoted ourselves to fitness and healthy eating about a year and a half ago, when we were preparing for the wedding and I'd gained ten pounds in grad school and he'd gained ten pounds living in a colder climate. ;)

We don't eat healthy all the time and don't guilt ourselves about having the occasional burger or a couple slices of Hoboken's amazing pizza but we do try to make healthy choices as much as possible. I stumbled across some products recently that are just too good (and good for you) not to share.

Special K's flatbread breakfast sandwiches. I have been loving this ham, egg, and pepper jack cheese sandwich. Its only 200 calories and I pop it into the microwave for a minute and half and then am out the door on my way to work.

Sitting almost right beside the breakfast flatbreads, were Kashi's blueberry waffles. We both love waffles and I had a personal trainer years ago when I competed in pageants who swore by anything Kashi so I picked up a package of these. I was a little skeptical about whole grain waffles but these were as good, if not better, than any other brand of frozen waffle. Bonus: only 150 calories and loaded with fiber. Corey and I each ate one, with just about a tablespoon of light syrup, and a side of fresh fruit.
The real winner of our grocery shopping trip was Sensible Portions Pita Bites. They come in a variety of flavors - we chose the garlic and chive and they are only 120 calories for 9 chips. They're a very good size so 9 chips would be a lot of chips! These are flavorful and light and so delicious. I've been eating 3 chips, 4 or 5 carrots, and about 2 tablespoons of hummus as a snack and it is quickly becoming a favorite. It is also a really filling, satisfying snack for only about 100 calories.
I also picked up a box of Skinny Cow ice cream bars because they really are so creamy and good for only 100 calories.

Monday, Monday!

Happy Monday, girls! Today's Monday has been pretty amazing since Corey and I are both off work. We slept in, headed to the gym for a great workout, and now he's getting some work done while I stalk all your blogs clean and do laundry. ;)

Yesterday was a really pretty 50 degree day and we saw the sun for what felt like the first time in ages. We headed out for a long walk with Riley and then watched football in the afternoon. Today it is freezing and overcast again. And the forecast for this week is pretty depressing. See... 

I'm feeling majorly homesick for the Carolinas right now.  You won't hear a peep out of me about feeling chilly on a 50 degree day ever again. 

I'm still wearing sweaters and sweater dresses pretty much everyday. Here are some recent work OOTD's.

I've shared this outfit before but tried it with a different statement necklace last week. I loved the look.

 This is the perfect teacher dress because it is an appropriate length and has a pocket. From a boutique in Hoboken and paired with my Tory revas and tights. 

It snowed last week. It was really this disgusting snow/icy slush mixture. I bundled Riley up in one of his puffer coats for our morning walk.
Sometimes I feel super guilty because Riley cries whenever I leave for work. He has major separation anxiety. I keep telling my husband that in the summer, when we move to a larger space, we're going to have to adopt another dog to keep him company. I want another Cavalier but the shedding from one drives me crazy. Corey wants a more masculine dog. I was playing around on Pinterest one evening last week and came across this:
Its a Cavapoo - a hybrid mix of a poodle and a Cavalier King Charles. They have a super sweet temperament similar to Riley's but they generally don't shed. Now, how in the world do I convince my husband??

Beat the Cold Weather Blues

The weather here lately has had me feeling a little blue. It snowed yesterday and I feel like I can't even remember the last time I saw sunshine.

Not only is my mood affected by the glum weather, so is my body, hair, and skin. To tackle the cold weather blues, I try to take a couple extra precautions in my beauty routine.

I find myself wanting to drink only warm beverages like coffee, tea, and hot cocoa. These can be dehydrating to your skin and leave you feeling worn out. I try to make a point to drink lots of water, even when something hot might be preferable.
Not only does the cold dry out my hands but the viruses and colds going around require me to sanitize and wash my hand what feels like a thousand times a day. I keep them from looking and feeling dry by using the Mary Kay Satin Hands collection. I use the exfoliating scrub after I wash my hands and keep the lotion by my sink at home and on my desk at work. The real secret, though, is the night cream. I put it on when I crawl into bed. It's thick and so moisturizing.

The cold and wind can stress and dehydrate your hair. I use the Macadamia Natural Oil masque twice a week. I leave it on for about seven minutes while I exfoliate my body, shave my legs, etc.

Speaking of exfoliating my body, my favorite body scrub is Smooth as a Duck's Butt which can be found at Franscesca's. It's thick and gritty so it does a great job at removing dry skin and the sweet cream smells heavenly. It's a little pricey but last forever so it's totally worth it.
I always feel so washed out in the winter months when I don't spend as much time outside. Tan Towels are my absolute favorite sunless tanner. They go on smooth and the color is super natural. I use them twice a week and supplement with a gradual tanning lotion to maintain color.
I like to keep my lips smooth and hydrated so I can kiss on my husband. Every couple nights I use Mary Kay's Satin Lips set. The mask smooths your lips and the balm hydrates.
I also love this Sugar rose scented lip balm. I got it as a birthday gift from Sephora. It is moisturizing and smells so good.

Hitched: the Ceremony

I'm sure by now you thought I'd abandoned my efforts to recap our wedding but I decided to get back to it today with another post in the Hitched series. Today, I'm focusing on our ceremony, which was held at the church I grew up in.

My mom made those awesome wreathes on the doors.

Our guestbook was a photobook with our engagement photos. I totally recommend this for brides to be because you will actually look at it again.

My dad and I right before the ceremony, the last ones left in the fellowship hall. Aside from our photographer, of course.

I chose simple pew florals of hydrangeas and roses for the reserved seating.

Every other pew on Corey's side had a picture of him as a child. Starting with a baby photo at the back and ending with his senior picture at the front.
And my side had pictures of me as a child.

I think my church is such a beautiful old church with so much character so I opted for simple alter arrangements of hydrangeas and soft pink roses. I think they were just perfect.

Friday Confessions

Happy Friday girls! Only 7 more hours until it is socially acceptable to have a cocktail in your hand. Six if you're like me and can leave work by 4. ;)  Today per the usual, I'm joining in on Confessional Friday, my favorite Friday link-up over on Leslie's blog. 

I confess...that I'm super jealous of the 60 and 70 degree days my parents are having in the Charlotte area. This was my OOTD for work earlier this week. We still have a little snow on the ground here so sweaters it is until further notice.

I confess...I am currently loving this cute Antrho top. It is the Sawyer Boatneck top and I think it would be just so perfect for a casual Friday for work. 

I confess... I'm also loving this bow back top from Petal Boutique. I love how feminine it is. Isn't the bow darling?

I confess...that lots of Lilly was added to my closet this week! My Lilly New Year Cheer purchases arrived yesterday. I scored a Somerset dress and two Lanette tops for awesome prices. The very next day, I found the Maria Boatneck sweater in pink on Re-Lilly for a great deal. I've been dying for this sweater but my size sold out online really early in the season and the closest Lilly store is not really close at all. 

I confess...that I fell asleep during the first two minutes of The Lying Game on Tuesday. Clearly, I also confess that, on occasion, I watch ABC family. I was worn out from work but woke up super disappointed that I didn't know what happened. Thank goodness for DVR. 

I confess...that I am so homesick. I haven't been home to the Carolinas since the wedding and I am dying for some Chik-fil-A nuggets with polynesian sauce like nobody's business. If you can find a way to ship me some, you will be my BFF. 

I confess...that I am obsessed with these monogram shoe clips my sweet cousin got me for Christmas. Mine are black with a gold monogram. I wore them to work with a pair of leopard flats this week and they are just too cute.
